This dish is Truffled Fettuccini Carbonara. Carbonara is a classic Italian dish with its names origin (corbone) meaning “coal”. This simple coal miners dish is traditionally made with spaghetti or fettuccini and is always accompanied by egg, black pepper and pecorino cheese.
